It’s almost the weekend! And if you are anything like me, getting through the weekend without treating yourself to a less than healthy meal can be pretty difficult. So I figured I would post one of my favorite healthy dinner recipes to help you start your weekend off right! It’s super easy, and most importantly, absolutely delicious.

I start most of my dinner recipes by throwing some diced onions and peppers into a frying pan with a little bit of oil. Then I may toss in some broccoli, maybe some carrots, and any other vegetable I can find in the fridge. If I have some chicken thawed, I’ll dice that up and mix it in with the veggies as well. When everything is in the pan, I season with some cajun spice and a bit of minced garlic. From there, you can do pretty much anything your heart desires. Make a wrap, toss in some tomato sauce and have a delicious pasta meal, etc. 

Recently, I have been making an effort to include more leafy green vegetables in my diet, and that generally means salad, salad and more salad. So to spice up my leafy greens, I have been topping all of my salads with warm sautéed vegetables and chicken.

I love, love, love cajun spice. I can’t get enough of it. So why not put it on my salad?

  1. 1/2 Onion
  2. 2 Bell Peppers
  3. 2 cups Broccoli florets
  4. 1 Carrot
  5. 1 to 2 Chicken Breasts
  6. 1/2 tbs Minced Garlic
  7. Cajun Spice to taste
  8. 4 cups Spinache
  1. Preheat wok on medium heat
  2. Add 1 tbs extra virgin olive oil to pan
  3. Dice all vegetables and chicken breasts
  4. Add vegetables and chicken to preheated pan
  5. Season to taste with cajun spice and garlic
  6. Saute until chicken is cooked through
  7. Serve over bed of spinach
  8. Add salad dressing if desired
  9. Enjoy!
