Double Chocolate Chip Mint Cookies

Christmas is approaching quickly, and with the holidays comes tons of delicious baked goods. So I thought I would make some Christmas inspired Double Chocolate Chip Mint Cookies.

I made this recipe twice. The first time I used brown rice flour instead of sorghum flour, both of which can be found at bulk barn. Also, in the second batch of cookies, I added a couple table spoons of crushed candy canes to the batter. I didn’t measure exactly how much candy cane I put in, I just did what felt right for me. It’s up to you how much candy cane you want, so add it slowly.

Dry Ingredients:

  • 1/2 cup Gluten Free All Purpose Flour
  • 1/2 cup Coconut Flour
  • 1/2 cup Brown Rice Flour or Sorghum Flour
  • 4 tbs Cocoa Powder
  • 1 tsp Baking Soda
  • 1/8 to 1/4 tsp Salt (less salt if using sorghum flour)

Wet Ingredients:

  • 1/2 cup Melted Coconut Oil
  • 3/4 cup Coconut Sugar OR 1/2 cup Coconut Sugar + 1/4 cup Honey
  • 1/4 cup Egg Whites
  • 1 tsp Vanilla Extract
  • 1/8 tsp to 1/4 tsp Mint Extract

Add After:

  • 2/3 cup Dark or Semi-Sweet Chocolate Chips
  • 1/4 Cup Crushed Candy Canes

 Directions:

  • Preheat oven to 350º F
  • Mix all dry ingredients in a bowl and set aside
  • Melt 1/2 cup coconut oil and add to mixing bowl
  • While continuously stirring, add the rest of the wet ingredients to the melted coconut oil
  • Once all of the wet ingredients are fully incorporated, slowly add the dry ingredients to the wet while continuing to mix
  • Add the chocolate chips and the crushed candy cane to the dough and mix well
  • Using your hands, roll 20 balls of cookie dough, and place them on your silicone baking sheet.
  • Place the baking sheet in the center of your oven and bake for approximately 10 minutes
  • When the cookies begin to crack, you know they are done
  • Remove the baking sheet from the oven and allow to cool for 5 minutes before transferring the cookies to a cooling rack.
