Healthy Shrimp Curry

I figure you guys are probably getting sick of all the muffin, cupcake, and cookies recipes that I’ve been posting lately, so I thought I’d come up with a healthy dinner recipe instead.

Curry is a favourite of ours, and I am SO SO SO happy, that I used a real camera to take these pictures, rather than my phone.

And by “I”, I mean my husband.

Ingredients:

With this recipe, you have the choice of using Thai or Indian curry. They both taste great!

Directions:

  • Cook rice and quinoa blend in a pot of boiling water (2.5 cups) until the grains have softened and all of the water has evaporated
  • Slice and dice all the vegetables (Onion, peppers,mushrooms, broccoli)
  • Sauté the vegetables over medium heat with 1 to 2 tbs of cooking oil
  • When the vegetables are almost done, add the shrimp
  • Sauté for another 2 minutes to make sure the shrimp are warm
  • Pour the can of coconut milk into a small sauce pan and heat on medium
  • Add the curry paste, minced garlic, minced ginger, salt and red pepper flakes
  • Simmer for 5 to 10 minutes
  • To serve, mix the vegetables in with the rice, then poor the curry sauce over top
