Okay, I know what you’re thinking… “Beet Juice!? Blah!”

I was a little skeptical too, when a friend made us our first glass of beet juice a couple weeks ago. Not because I didn’t want to give it a try, because I really did. I was crossing my fingers, hoping my taste buds would cooperate with my desire to love beet juice. It’s just… I’ve never liked beets…

So you can imagine how happy I was when I took my first sip and realized that it was delicious! And the colour is amazing! My husband and I went out first thing the next day a picked up a huge bag of beets to make our own juice. We added a few ingredients to the original recipe, but it’s basically the same as “Nadia’s Apple Beet Juice” ┬áThe only draw back to this recipe is that you need a juicer to make it.

* I re-juiced the pulp to make sure I got as much juice as possible. It wasn’t really necessary, but it depends on the quality of your juicer.
