For the past 3 weeks, I have been trying to come up with a healthy recipe for double chocolate muffins. Last week’s recipe was almost good enough to share, but it was too hard to replicate, and when I tried to make a “mini” version, they were almost impossible to get out of the silicone backing tray that I used.

Wednesday morning I was feeling adventurous, and decided to give the double chocolate thing another try. I also figured that this recipe would be a good opportunity to experiment with using hemp protein in my baking. This time, instead of trying to make muffins, I made some delicious double chocolate chip cookies!

Ingredients:

  • 1 can (540ml) Chick peas
  • 1/4 cup Hemp Protein (Pro-Fibre)
  • 2 tbs Cocoa Powder
  • 1/2 cup Honey (Agave if you want the cookies to be vegan)
  • 2 tsp Pure Vanilla Extract
  • 1.25 tsp Baking Soda
  • 1/3 cup Chocolate Chips (Carob chips if you want the cookies to be vegan)

Directions:

  • Preheat oven to 350º F
  • Add chick peas, hemp protein, cocoa powder, honey, vanilla extract and baking soda to your food processor and blend until smooth.
  • Transfer to a mixing bowl and add chocolate chips.
  • Spoon 18 spoonfuls of batter onto a silicone baking sheet and place in the oven.
  • Bake for approximately 18 minutes
  • Allow the cookies to cool completely before storing
