According to my neighbour, I hit the nail on the head with this recipe. In an attempt at being a hard critic, he told me that there was nothing special about my tuna salad. “It tastes just like any other tuna salad.”

Good! That’s what I was going for! Thank-you for the compliment :)

If you ask my husband, mayonnaise is a necessity in pretty much any recipe, but it is particularly important in tuna salad. It’s half the recipe! If my tuna salad didn’t taste like tuna salad, then I didn’t do my job!

Ingredients:

  • 1 can low sodium tuna in water
  • 1 ripe avocado*
  • 1 tomato – diced
  • 1/2 cup green onion – diced
  • 2 celery sticks – diced
  • 1 tbs minced garlic (Optional)
  • 1 tsp paprika
  • salt and pepper to taste

Serve on:

  • 1 Cucumber – sliced
Note: if your avocado isn’t ripe enough, add 2 tbs of plain greek yogurt to achieve the desired creaminess.

Directions:

  • Mash or process avocado until smooth
  • Combine all ingredients in a mixing bowl and mix well
  • Serve as a sandwich, or on slices of cucumber
