30 Days of Vegetables – Day 25

Warning: If you like to buy frozen foods at the grocery store and don’t want me to ruin that experience for you, please skip the following paragraph and head straight to the delicious recipe :)

Whenever I have made a frozen chicken burger in the past, I have always found my self questioning the quality of the meat that went into the patty. You can never really be certain of the ingredients in prepackaged foods, or know how long it has been sitting on the shelf. Frozen chicken products can be particularly scary. When reaching for a box of chicken burgers at the grocery store, I always wonder if someone else has already taken this same box out of the freezer, put it in their cart, and carried it around the grocery store for an hour before deciding that they don’t want it anymore, and putting it back on any old shelf. I really don’t want my chicken burgers thawed multiple times before I eat them. Needless to say, my paranoia prevents me from buying chicken burgers very often. But now I can make my own! They’re quick and easy, and if you ask me, they’re better than any frozen burger from the grocery store!

Not only can I put vegetables on top of my chicken patties, but I can also put veggies in them!

  • 2 chicken breasts*
  • 1 bell pepper **
  • 1/2 red onion
  • 1 tbs minced garlic
  • 1/4 to 1/2 tsp salt
  • 2 tsp red pepper flakes***
  • Black pepper to taste
  • 1 to 2 tbs oil of your choice for cooking

*You can also use ground chicken instead of the chicken breasts, and skip the step of processing the chicken.

**I used 1/2 an orange bell pepper and 1/2 a red bell pepper. The left over halves were used as toppings for our wraps

***2 tsp of red pepper flakes created mildly spicy chicken patties. Add an extra 1 to 2 teaspoons for a medium or hot flavour

  • Preheat a large frying pan  with 1 tbs of oil on medium heat.
  • Place the 2 chicken breasts into your food processor and blend until they have reached a paste like consistency. Small chunks of chicken are okay, and may be preferred. If you do not have a food processor, dice the chicken with a good knife, into very small pieces.
  • Dice the bell pepper or peppers, as well as the red onion into very fine pieces. I chose not to use my food processor on the vegetables to avoid adding excess water to the chicken patties.
  • Place all of the ingredients into a large mixing bowl, and combine well.
  • This recipe should make 5 good sized patties. Use a large spoon to scoop approximately 1/5th of the chicken mixture into the pan and shape it into a patty, using your spatula.
  • Cook for approximately 3 minutes on each side, or until the patty is cooked all the way through.

Serve as a burger, in a wrap, or even on a salad!
