30 Days of Vegetables – Day 24

I love having a food processor… actually, I have two. And yesterday, I learned just how much I rely on them. I thought I could use a regular hand grater to finely slice the carrots and the apples for this recipe, but as it turns out, the hand grater turned the apples into a wet mush, instead of fine, crisp slices. The carrots were also wetter than I would have liked, but they were still okay to use for this recipe.

If you do not have a food processor, you can still make this recipe very easily, but you will most likely have to cut your apples by hand, like this…

Salad Ingredients:

  • 2 medium carrots
  • 3 to 4 apples
  • 1/2 chopped apricots
  • 1/2 cup raisins
  • 1/2 cup pumpkin seed
  • 1/2 cup almond slivers

Dressing Ingredients:

  • 1/2 cup Greek yogurt
  • 1 tbs mustard – I used a bold and spicy mustard
  • 1 tbs balsamic vinegar
  • 1 tbs honey
  • 1/4 tsp salt
  • Pepper to taste

Salad Directions:

  • Use a food processor, cheese grater, or knife to finely slice the carrots, apples and apricots.
  • Add all of the salad ingredients to a large bowl and combine using a salad spoon or spatula.

Dressing Directions:

  • Add all of the dressing ingredients to a small bowl and combine using a small whisk
  • Pour over the salad and mix well
