30 Days of Vegetables – Day 20

This recipe is perfect for a snow day! It’s warm, filling, and has tons of vegetables. The ingredient list may seem long, but the recipe is really easy to make. Just throw everything into a big pot and let it simmer. The longer you simmer, the better your chili will taste!

Ingredients:

  • 1 tbs grape seed oil
  • 1 lb extra lean ground turkey
  • 1 red onion – diced
  • 2 cans diced tomatoes
  • 1 can red kidney beans
  • 1 can mixed beans
  • 1 can tomato paste
  • 1 red bell pepper – diced
  • 1 yellow bell pepper – diced
  • 1 orange bell pepper – diced
  • 4 celery sticks – diced
  • 3 tbs garlic – minced
  • 2 tbs dried marjoram
  • 1 tbs dried oregano
  • 1 tbs dried basil
  • 1 tsp paprika
  • 3 tbs chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbs honey

Directions:

  • Preheat 1 tbs of grape seed oil in a large pot on medium heat.
  • Add the ground turkey to the pot and sauté until the turkey turns brown
  • Add the diced onion to the pot and sauté until the onions become translucent
  • Add the rest of the ingredients to the pot and simmer on low to medium heat for 1.5 hrs.
