30 Days of Vegetables – Day 19

I didn’t spend too much time taking pictures of this recipe before I ate it, because I just couldn’t wait to dig in!

I spent the entire day feeling hungry, even though I was eating every few hours. There was no obvious reason for my hunger, but I guess I was just having one of those days…

Usually when this happens, it is because our bodies are craving something, and it appears that my body was craving healthy fats! Good thing I had plenty of avocados on hand!

Ingredients:

  • 1 or 2 whole tomatoes –  sliced
  • 1 avocado – sliced
  • 1/8 onion or 1/2 shallot – diced finely
  • 1 tsp grape seed oil
  • Salt and pepper to taste

Directions:

  • Slice the tomatoes and avocado into relatively large pieces.
  • Dice the onion into small pieces to achieve an even flavour throughout the salad. If you really like onion, feel free to cut larger pieces.
  • Place everything in a salad bowl and stir a few times to fully incorporate the ingredients
  • Drizzle a teaspoon of grape seed oil over the mixture
  • Add salt and pepper to taste.
