30 Days of Veggies – Days 16 and 17 

When I hear “Super Bowl” I think of greasy pizza and sauce covered wings. Neither of which support a healthy or active lifestyle. These foods definitely taste great, but aren’t worth the guilt and sore stomachs that will inevitably follow. On Monday, I want to feel energized and ready to start my week, not weighed down by the food I ate the night before. Thats why I have come up with 2 delicious and healthy recipes that are perfect for Sunday night football!

Ranch Veggie Dip

Ingredients: 

  • 1 cup plain greek yogurt
  • 1 tbs +1tsp honey
  • 1/2 tsp dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp parsley
  • 1/2 tsp salt

Directions:

Mix all ingredients in bowl. When everything is well incorporated, transfer to a serving dish and Enjoy!

Turkey Meatballs

Turkey Balls

 Ingredients:

  • 1 lb lean ground turkey
  • 1 egg
  • 1/2 c shredded carrots
  • 1/2 c diced shallots
  • 1 tbs minced garlic
  • 1 tbs fresh, diced cilantro
  • 1 tbs dried oregano
  • 1 tbs dried basil
  • 2 tbs mustard
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 2 tbs grape seed oil

Directions:

  • Preheat a large skillet on medium heat
  • Add the grape seed oil to the pan
  • Combine the rest of the ingredients in a large mixing bowl.
  • Use a melon scooper or your hands to make approximately 30 small meatballs.
  • Place the meatballs in the pan and brown evenly on all sides
  • Reduce the heat and allow the meatballs to cook the rest of the way through (approximately 10 minutes, but it will depend on how big you made your meatballs).
  • Place the meatballs in a serving dish and Enjoy!
