30 Days of Vegetables – Day 15

My husband makes the best bruschetta! Way better than any bruschetta we’ve ever purchased at the grocery store. And the best part is, it’s made almost entirely from vegetables!

I was so excited about sharing this recipe as one of my 30 vegetable recipes, until I realized that there was one small flour filled problem… the bread!

“Thats okay,” I thought. It shouldn’t be too hard to come up with a healthy bread or cracker recipe… right?

I’d never tried to make home made crackers before, so I thought it would be a great learning experience or experiment. And by experiment, I mean, I would make one batch, it would be perfect and the crackers would taste better than any crackers I’ve ever had! Wrong!

I don’t think I burned them, but they sure tasted like I did. They also didn’t stick together very well. They were a big crumbly mess! There was no way that these crackers were going to hold up under a big scoop of my husbands bruschetta.

Trying to make another batch seemed like a daunting task, so I had to figure out another way to serve this scrumptious mixture of veggies!

And I think I came up with just the thing for the job!

Cucumbers!

Bruschetta Ingredients:

  • 2 cups diced fresh tomatoes
  • 1 red bell pepper – diced
  • 1/3 to 1/2 cup diced shallots or onions
  • 1.5 tbs cilantro – diced finely
  • 1 tbs thyme – diced finely
  • 2 tbs oregano*
  • 3 to 5 cloves minced garlic
  • 1/2 tsp salt
  • 1/4 black pepper
  • 2 tbs grape seed oil

Base for the Bruschetta:

  • 3 english cucumbers

How to Prepare the Cucumbers:

  • Cut both ends off each cucumber
  • Cut each cucumber into 1.5 inch chunks
  • Cut each chunk down the middle lengthwise
  • Use a spoon scrape the seeds out of each section of cucumber

Bruschetta Directions:

  • Dice all the vegetables and herbs.
  • Mix all ingredients in a large bowl. Make sure everything is well incorporated.
  • Use a small spoon to scoop the bruschetta into each cucumber slice.
