30 Days of Vegetables – Day 14

I love Thai Green Curry! Unfortunately, my favorite Thai restaurant is about an hour away, and I have no idea what they put into their curry to make it taste so good! The Thai restaurants that are near our house are good as well, but I am much more comfortable eating food, when I know exactly what is in it.

For today’s recipe, I decided to use Quinoa as a substitute for the rice that is traditionally used in Thai curry recipes. For cooking instructions on how to prepare your quinoa, click here.



  • Preheat a pan on medium heat
  • Add the olive oil and chopped onions to the pan. Sauté until they begin to soften.
  • Add the chicken to the pan. Cook for approximately 5 minutes.
  • Add the rest of the vegetables, cover, and let cook for another 5 minutes.
  • Pour the coconut milk over the chicken and vegetable mixture. Add the rest of the spices and mix well.
  • Simmer for another 5 minutes
  • Salt to taste
  • Serve over warm, cooked quinoa.
