30 Days of Vegetables – Day 10

A few months ago, a client of mine gave me a recipe for a vegan bolognese sauce. The recipe was great, but we both agreed that we weren’t comfortable consuming the textured vegetable protein. TVP is highly processed and because neither of us are vegan, it didn’t make sense for us to use it as a meat alternative.

But in terms of taste, this sauce was a huge success. So this weekend I decided to come up with a slightly altered version of this recipe, that can be served with pasta, or poured over steamed vegetables!



  1. In a large dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onions and carrots and sauté for about 5 minutes, until they begin to soften.
  3. Add a pinch to 1/4 teaspoon of salt and pepper to taste.
  4. Then add basil, oregano, thyme, bay leaf and crushed red pepper. Mix well and add a bit more olive oil if pan looks dry.
  5. Add minced garlic and stir until fragrant. Be careful not to let the garlic burn.
  6. Let simmer for a minute or two.
  7. Next add your can of tomato paste, mix well and cook for a minute or two before adding the large can of crushed tomatoes.
  8. As sauce begins to bubble, be sure to give the mixture a stir a few times so that the liquid gets incorporated with the spices.
  9. Reduce heat to low, and simmer for ~ 5 minutes
  10. Remove from heat and allow to cool
  11. Pour into blender and blend until smooth, or until it has reached the desired texture
  12. Add additional salt, crushed red pepper, and honey to taste
  13. Transfer to a jar for storage, or reheat to serve
