30 Days of Vegetables – DAY 6

Every time I pick up a tub of greek yogurt in the grocery store, I get a look from my husband. I have been known to buy multiple tubs of greek yogurt or cottage cheese, put them in the back of the fridge and then forget about them. So now I only buy yogurt when I have a plan to use it in a recipe.

And this Sunday I had a delicious and nutritious plan…

Dressing Ingredients:

  • 1/2 cup Plain greek yogurt
  • 1/2  Medium red onion – chopped
  • 2 Cloves garlic – chopped
  • 1/2 tbs Mustard (or to taste)
  • 1/2 tbs Apple cider vinegar
  • 1 tbs Honey
  • 1 tbs Lemon Juice

Salad Ingredients:

  • 2 Heads fresh broccoli
  • 1/4 cup Dried cranberries
  • 1/4 cup Raisins
  • 1/4 cup Sunflower Seeds

Directions:

  • Place all dressing ingredients in your food processor or blender and mix for approximately 5 to 10 seconds. I prefer to keep the onions just a little bit chunky
  • Wash and cut the broccoli into bit size pieces
  • Mix the dressing with the broccoli and sprinkle cranberries, raisins, and sunflower seeds on top
