30 Days of Vegetables – Day 5

This Saturday was unusually warm for a mid January day in Canada. We were even able to walk outside without our parkas on! ha! (Just kidding…I don’t have a parka, but my long underwear definitely got the day off)

It almost felt like summer….

And nothing tastes better on a hot summer (winter) day than a fresh fruit and spinach salad.

Dressing Ingredients:

  • Juice from 2 oranges* (~200ml)
  • Zest from 1 orange
  • 2 Cloves garlic – minced
  • 3 tbs Extra virgin olive oil
  • 2 tbs Balsamic vinegar
  • 2 tbs Honey
  • 1/8 tsp Salt
  • 1/8 tsp Black Pepper

 Salad Ingredients:

  • 2 cups Leaf Lettuce
  • 2 cups Baby spinach
  • 1 Orange – Peeled and cut into chunks
  • 2 tbs Dried cranberries
  • 2 tbs Sunflower seeds

Directions for the Dressing:

  • Add all ingredients to your blender
  • Blend until smooth
  • Pour into a suitable storage container and set in the fridge to chill
  • Pour over your favorite salad

*Note: I used an electric juicer to juice my oranges. If you do not have one, you may need an extra orange or two.
