30 Days of Vegetables – Day 4

Baked sweet potato and zucchini is my go to meal for those nights when all I want to do is “Veg” on the couch. I usually pair this meal with some form of meat, but it’s pretty great on it’s own as well.

  • 1 Sweet potato – cut into fries or chunks
  • 4 Medium zucchinis – cut in quarters length-wise or thick discs
  • 1 tbs Extra virgin olive oil
  • 1 tbs Minced garlic
  • 1tsp Paprika
  • 1/2 tsp Cayenne pepper
  • 1 tsp Sage
  • 1 tsp Thyme


  • Preheat oven to 400º F
  • Line a baking tray with aluminum foil
  • Spread the sweet potato and zucchini slices in a single layer on the tray
  • Mix the olive oil and spices in a small bowl, then brush the mixture over the vegetables
  • Place the baking tray in the oven and bake for 15  to 20 minutes
*Note: If you want crispy sweet potato fries, bake for 15 minutes, turn the fries over and bake for another 5 to 10 minutes depending on the strength of your oven
