Turning my negatives into positives….

Last weekend, my husband and I had breakfast at Cora’s. (That’s not the negative… don’t jump to conclusions so quickly!) As we were leaving I found a stack of recipe cards for Cora’s “Apple and Maple Muffins”, and even though I was stuffed with eggs, fruit, toast and a suspiciously sweet smoothie, I thought, “I would love an apple muffin right about now!” So I grabbed one of the cards with the intention of baking some apple muffins later on that day… Unfortunately, due to my battle with procrastination, it took me about a week to get around to it. But I finally did, and they taste amazing!

Positive! They were well worth the wait! And my husband agrees :)

Along with procrastinating, I also suffer from the inability to follow instructions… I tell myself it helps foster my creativity :D…

Apple Almond Butter Breakfast Muffins

Ingredients:

Wet:

  • 2 Eggs
  • 1/2 cup Apple Sauce – Unsweetened
  • 1/4 cup Almond Butter – Just almonds
  • 1/4 cup + 2tbs Maple Syrup – Natural
  • 1 tbs Coconut Oil – Melted

Dry:

  • 2 Apples – Peeled and Diced
  • 1/4 cup Coconut Flour
  • 1/4 cup Rolled Oats – Uncontaminated
  • 1/4 cup Quinoa Flakes
  • 2 tbs Chia Seeds – Ground
  • 2 tbs Hemp Hearts
  • 1/2 tbs Cinnamon
  • 1/4 tsp Salt
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda

Directions:

  • Preheat oven to 400° F
  • Combine all wet and dry ingredients separately before mixing together
  • Once all the ingredients are fully incorporated, scoop a large spoon full of batter into each cup of your silicone muffin tray. The general rule is 2/3rds full to allow the muffins to have room to expand. (I prefer to use silicone baking trays for two reasons. One, because you do not need to grease the tray, and two, removing the finished muffins is much easier. I find with other baking trays, or muffin liners, you tend to lose the bottom of your muffin when trying to get it out of the tray or the paper.)
  • Place the tray in the center of your preheated oven and bake for approximately 25 minutes
