To prepare these brownies, you will need a food processor, and a serving dish. The size of the dish is dependent on how thick you want your brownies to be. Remember, although these brownies are healthy and full of nutrient dense ingredients, they are a treat, and therefore, you must be mindful of the serving size. I prefer to make my brownies approximately 1.5 cm thick in a 7”x7” container.

First add the walnuts to the food processor and blend until they are finely ground. If you want your brownies to have a bit of crunch to them, save some of the walnuts and add them at the end.

Once the nuts have been ground, add the dates to the food processor. Blend until the dates are chopped into tiny pieces and mixed fully with the walnuts.

Add the cocoa, honey, and vanilla to the mixture and blend for another 15 seconds. The mixture should turn and dark brown colour and look a little bit moist. Press the mixture into your serving dish, top with nuts or cocoanut, and put it in the fridge for 10 minutes. This helps keep the brownies together, but it’s not necessary.

Cut the brownies into 9 equal squares and enjoy!
