A.K.A. Carrot Banana Muffins

Wet Ingredients:

3 Eggs
1.5 tbs Coconut Oil melted
2 tbs Almond Milk
3 tbs Maple Syrup
1/2 tsp Vanilla Extract
1/2 tsp Grated Ginger

Dry Ingredients:

1/2 c Rolled Oats ground into flour
1/2 c Quinoa Flakes ground into flour*
2 tbs Ground Flax
1 tsp Cinnamon
1/2 tsp Pumpkin Pie Spice
1/2 tsp Baking Soda
1/2 c Shredded Carrots
2 tbs Rasins
1 Banana Chopped into small pieces

Baking Instructions:

Preheat your oven to 400 degrees F
Mix all dry ingredients and all wet ingredients in two separate bowls. Be sure to add the chopped banana last. Having chunks of banana in the muffins goes a long way to sweeten and add flavour
Combine the wet ingredients with the dry and mix well
Scoop the batter into a silicone muffin tray
Place the muffin tray in the middle of your oven rack
Bake for 20 to 25 minutes**

*Note: If you do not have Quinoa flakes, you can use a full cup of ground rolled oats

** If you choose to only use rolled oats in this recipe, baking time will be reduced to approximately 15 minutes
