Zucchini and Spinach Pizza

Servings: 4 slices
Serving size:1 sclice
Making the dough for this pizza is a little tricky, but well worth the effort! I tried it a few ways, and this is what I recommend:

Dough Ingredients:

2 Shredded Zucchinis
1/4 cup Whole Wheat Flour (or flour of your preference)
Handful of Fresh Spinach (chopped into small pieces)
2 Egg Whites (I used one of the yolks as well)
1 tbs Minced Garlic
1 tsp Basil
1/4 tsp Salt or to taste
Sprinkle of Fresh Cilantro (optional)
2 tbs ground Flax (optional)

Sauce Ingredients:

1 Tomato
Handful of Fresh Spinach (Optional. The sauce turns and ugly green colour, but don’t worry, no one will notice!)
2 scoops of Tomato Paste
1 tbs minced Garlic
1 tsp basil
Fresh Cilantro
1/4 tsp Salt or to taste

Topping Suggestions:

The Toppings are up to you!
1/4 of a 500g block of Partly Skimmed Mozzarella Cheese
Sprinkle of Parmesan
1 Green Pepper
2 Chicken Breasts
2 Medium Mushrooms

The reason this pizza is so amazing, is that it is primarily made out of vegetables! So you can relax and enjoy it! The only concern you should have is with how much cheese you use. I used approximately 1/4 of a 500g brick of partly skimmed mozzarella cheese, but you can definitely use less and still fully cover your pizza. If you follow this recipe directly, each pizza slice should only contain about 80 calories from cheese!

Dough Preparation:

Pre-heat your oven to 400F
Peel and shred 2 medium zucchinis
Combine all of the dough ingredients in a large mixing bowl
Grease a non-stick baking sheet with 1 tbs of extra virgin olive oil, then sprinkle a small amount of flour over top.
Pour the dough in the center of the baking sheet and spread out with your spatula. How much you spread is dependent on how thick you want your crust to be.
Place the baking sheet in the oven and bake for approximately 30 minutes. Keep an eye on the edges of the crust to avoid burning the bottom of the dough.
The top of the crust should be dry, but it will not be hard
Let the crust cool for 5 minutes before loading the toppings on.

Pizza Construction:

Combine all of the sauce ingredients in the blender and mix well.
Spread the sauce over the dough
Top your pizza with whatever you desire
I topped my pizza with chicken, which was cooked in 1 tbs of Extra Virgin Olive Oil and 1 tbs cajun spice
Bake for another 15 minutes, or until the cheese is fully melted.
Let cool for 3 to 5 minutes before serving
