Quinoa Stuffed Mushrooms! Yum!

Servings: 6

Portion Size: 2 Mushrooms

Ingredients:

12 Medium Stuffing Mushrooms
1 cup uncooked Quinoa
2 Chicken Breasts
1 Bell Pepper
2 cups Fresh Spinach
1/2 White Onion
2 tbs Olive Oil
1-2 tbs Cajun Spice

Sauce:

1 Tomato
2 scoops of Tomato Paste
1 tbs minced Garlic
1 tsp basil
Fresh Cilantro
1/4 tsp Salt

Preparation:

Rinse the quinoa well before cooking. Place it in a pot of boiling water and let simmer until it is fully cooked (See picture 2).
Put all the ingredients for the sauce in the blender, mix well, then set aside.
Chop two fresh chicken breasts into small pieces. Use 1 tbs of olive oil to grease a large frying pan. Set to medium heat. Fully cook the chicken breasts with the cajun spice. Add the cooked quinoa to the pan along with the chopped onion, pepper, and spinach. Cook for another 5 minutes or until the vegetables are slightly soft.
Rinse the mushrooms and remove their centers. Cover a baking sheet with aluminum foil and set the mushrooms on the tray. Put a large spoon full of the quinoa in each mushroom and bake at 350F for 15 minutes, or until the mushrooms are the desired texture.
