Prep Time: 30 minutes (most of the time is spent cutting the vegetables)

Serves: 6 to 8


1 Lb Extra Lean Ground Beef (You can substitute with a different meat or tofu)
1 Can diced tomatoes or 2 fresh diced tomatoes (fresh is always better)
2 Onions
2 Peppers
1 Cup Mushrooms
2 Scoops Plain Greek Yogurt
1 340g Bag Broccoli Slaw
2 tbs Extra Virgin Olive Oil

Suggested Spices:

Use the flavours you prefer. I chose to make my sauce spicy!
1 tbs Garlic
1/2 cup fresh Cilantro
1 tsp Basil
Chili Peppers – season to taste
Cayenne Pepper – season to taste

This recipe is great for when you’re craving pasta. Don’t feel bad if you go for seconds, everyone could use an extra serving of vegetables!


For this recipe you will need a frying pan and a blender or food processor

Add 2tbs of olive oil to a frying pan and sauté the onions. Take half the onions and add them to the blender along with the tomatoes, yogurt, and the seasonings. Blend well.

Add the ground beef to the rest of the onions. Wait for the beef to turn brown, then add the rest of the vegetables to the pan. Cook for a few minutes and then add the sauce to the pan. Because the meat is already cooked, you just have to wait for the sauce to heat up.

To prepare the broccoli slaw, it can be steamed or boiled. How long you cook it for is up to you. The longer you cook it, the softer the noodles will be. I chose to to just cook them long enough for the slaw to be warm.
