Amazing Banana Pancakes

Servings: 3 to 4

Cakes per serving: 2 to 3

Ingredients:

1 cup Oats (I used rolled oats, but you can substitute with whatever you like)
1 cup Cottage Cheese
1 Banana
2 Eggs
3 tbs Maple Syrup
2 tsp Vanilla Extract
2 tbs Ground Flax

Preparation:

Set the frying pan to medium heat and add a small amount of olive oil. Use a food processor to grind the oats into a power. Add the rest of the ingredients to the processor and mix well. Spoon the batter into the frying pan, making 4” circles. Flip the pancakes when the edges start to bubble and the bottom is golden brown. Brown the other side of the pancake and serve!

Top your pancakes with warm fruit, yogurt, or another tbs of maple syrup, and ENJOY!
